He trained under some of the finest Basque masters before becoming the right-hand man of one of them, Aitor Arregi.
Educated at the prestigious Luís Irizar Culinary School, and after working in renowned Basque establishments such as Arzak, Akelarre, Zuberoa, and Eurepel, the Argentine Pablo Vicari joined the Elkano restaurant in Getaria in 2006 as a gastronomic consultant, combining this role with teaching in the professional program at the Irizar school.
Since 2012, he has served as head chef of the restaurant and has co-directed new projects alongside Aitor Arregi. These include Elkano Txiki and Cataria, Elkano’s outpost in Sancti Petri (Cádiz), specifically located within the Hotel Iberostar Selection Andalucía Playa.
