Rosalía arrived in Spain 16 years ago from her native Peru (where, fascinated by cookery, she worked with the immense Gastón Acurio, at Astrid & Gastón). She got off to a splendid start here in San Sebastián, in Lasarte, with Martin Berasategui, and then moved to Tenerife.
Three years ago she opened Qapaq on the criterion of her in-depth illustrated knowledge of Peruvian traditions and cosmopolitanisms from a contemporary perspective not unrelated to tradition.
She has a recommendation in the Repsol Guide.
