Aponiente has pioneered the utilisation of the sea larder, and it may be said it has made history.

The talk will focus on the development of Aponiente, from its creation to the present day. Ángel León will be telling us how he harnessed the huge marine biomass that others did not want or were unable to see to take another step forward in the evolution of sea cuisine in the 21st century.
